Corn and chickpeas are roasted with a blend of warm spices until crisp and full of flavour. They’re then tossed with crumbled feta, fresh spring onion, coriander, and tangy pickled red onion. A creamy, flavourful dressing ties everything together beautifully!

I’m a big fan of hearty salads, and this one ticks all the boxes. Each portion has 24g of protein, 482 calories, and about 13g of fibre. The fibre of course is fantastic for gut health (especially paired with the yoghurt in the dressing!). It’s also got a good amount of carbohydrates from the corn and chickpeas, making it satisfying and energising. Plus, it’s perfect for meal prep—store it in the fridge, and you’ve got a delicious lunch or dinner ready to go.

This salad is filling enough on its own, but if you’re looking to boost the protein, it pairs wonderfully with so many options! Try it with grilled or pan-fried salmon for a fresh, light addition. Or if you like red meat, it’s also fantastic alongside steak.

Helpful Hints

Shopping: When choosing Greek yoghurt, look for one that contains gut-friendly bacteria. Check the label or ingredients list for phrases like "Live Active Yoghurt Cultures." Try and also find a strained Greek yoghurt with at least 10g of protein per 100g—it makes a big difference in both taste and nutrition. My current favourite brands are Fage and Yeo Valley!

Baking: The right kitchen equipment can make all the difference in cooking, especially when it comes to achieving the perfect texture. When roasting foods that need to be crisp, I always reach for a large, shallow baking tray. The low sides allow better air circulation, reducing the chance of steaming and ensuring your food turns out perfectly crisp and delicious!

For My Fellow Romantasy Fans

I only discovered romantasy (romantic fantasy) just before Christmas, but I’ve already read so many books in the genre! I just finished Onyx Storm by Rebecca Yarros, part of a three-book series (so far). It’s such an easy read and the perfect form of escapism. If you like romance and fantasy, I definitely recommend giving it a try—the first book in the series, Fourth Wing, is my favourite of the three!
