I love a vegetable-based curry, but I often find they don’t have quite enough protein - so I’m hungry again an hour later! This recipe, though, strikes the perfect balance: it’s filling, nourishing, and high in protein. One portion contains 518 calories, 33g of protein, and 20.5g of fibre! Since the recommended daily fibre intake is around 30g, this meal gives you a great head start. 😅

I like to roast the chickpeas and crumbled tofu in the oven for extra crispiness, but if I’m short on time, I make this a simple one-pot dish - just add the chickpeas and tofu along with the cauliflower.

While the chickpeas provide some carbohydrates, this dish is, of course, even better with naan or rice if you fancy something extra. You can use either light or full-fat coconut milk, depending on how rich you want the curry to be! If you have a bit more time and want to elevate the flavours, I love adding toppings like pickled red onions, cucumber raita, and fresh coriander.

If you missed my healthier brownie recipe this week (it’s up on my website, carolefood.com), I’d definitely recommend checking it out! It has about half the sugar of a regular brownie but is still fudgy and delicious - plus, it’s gluten-free if that’s something you’re looking for.

I was also wearing a CGM (continuous glucose monitor) when testing these. A CGM tracks blood sugar levels in real time, showing how different foods affect your body. These brownies had very little impact on my blood sugar, which is great! That means I often have one as a mid-morning or pre-run snack!

My fiancé and I are keeping it low-key at home for Valentine’s Day. There are plenty of great restaurants nearby, but tonight we’re staying in - though I’m not entirely sure what we’ll be cooking yet! I do know I’ll be making a mini cake for two though!! We’ve also just started watching The Åre Murders on Netflix. We love Scandi Noir, and so far, it’s been really good - definitely worth a watch!
