7 Ingredient Sun-Dried Tomato Dip

Each Friday, my partner and I had a little tradition: we'd buy a massive bag of crisps and a pot of sour cream and chive dip, and polish off the lot before dinner. It’s been a while since we’ve done that ritual, but my love for dips remains as strong as ever.

Dips are perfect during the festive season—they’re a crowd-pleasing canapé, a fantastic starter, or a delicious addition to any buffet spread. Which brings me to my latest favourite: my 7-Ingredient Sun-Dried Tomato Dip.

This dip is rich and savoury, thanks to the sun-dried tomatoes, with just the right balance of acidity and sweetness from the balsamic vinegar. Oh, and it’s vegan! Though, if you fancy it, it’s also amazing topped with a sprinkle of crumbled feta or as a crostini topping with a sliver of anchovy (anchovy lovers, unite!).

But the beauty of this dip lies in its versatility. Of course, it’s a dream paired with bread, crisps, or any crunchy carb. But it also works wonderfully as a pasta sauce. One day, I spooned it over avocado toast, and it was so good!! Bonus: this dip is ridiculously smooth. Possibly the smoothest dip I’ve ever made?

Now, let’s talk cashews. Lots of recipes call for soaking them overnight or for at least 30 minutes, but I have a shortcut: just pour boiling water over the cashews while prepping the other ingredients. By the time you’re ready, the cashews will be soft enough to blend. If you prefer to soak them longer for nutritional reasons, feel free! But if you’re like me and know an overnight step means the recipe might never happen, this method works great.

For those allergic to nuts (I hear you—I’m allergic to peanuts myself, so I know the struggle), you can substitute the cashews with white beans, like butter beans or cannellini beans. You may need to tweak the water a bit, but the result is just as delicious.
